Negroni Blanco de Pisco, Pisco White Negroni

Presenting, Negroni Blanco de Pisco, a White Negroni variation. Pisco instead of gin, white vermouth instead of sweet red vermouth, and a white bitter liqueur instead of Campari. To honor #fogust in San Francisco (the foggy month of August), I added smoke to the cocktail.

INGREDIENTS
  • 1 oz. Barsol Pisco Acholado
  • 1 oz. Carpano Bianco
  • 1 oz. Luxardo Bitter Bianco
  • smoke
  • expressed orange peel for garnish
PREPARATION

Combine the spirits into a mixing glass with ice. Stir until chilled and strain into a coupe. Garnish with an expressed orange peel. Place the coupe under a glass dome and insert smoke into the dome using a smoking gun with hickory wood chips. Turn off the smoking gun and let the drink sit under the dome for a minute. Uncover the dome and serve.

NOTES

For the glass dome, I used the glass vessel from my coffee press. Inverted, the spout was the perfect opening for the smoking gun tube. If you’ve never used a smoking gun before, be sure to read the instructions carefully.
